In honor of Earth Hour Saturday March 31 8:30PM and turning off the power, here’s a delicious sweet treat recipe that required no power to make.

“Raw” Chocolate Nut truffle Bites with Chia Seed Truffles

These little raw treats are healthy and packed with super foods like chocolate, nuts, chia seeds, and coconut that help boost your nutritional intake. They can be rolled in several different coatings. I love coating them in chia seeds because it gives them a great crunch and look! Chia seeds are the highest plant based source of fiber, have omega 3 fatty acids and are protein.

“Raw” Nut Date and Coconut Truffles

Please use certified organic ingredients whenever possible.

1 1/2 Cups shredded un-sweetened coconut

1/2 Cup ground walnuts

1/2 Cup ground macadamia nuts

1 1/2 Cup finely ground almond meal (you can grind your own in a blender)

2 Tablespoons black chia seeds

2 Tablespoon white chia seeds

1/4 Teaspoon sea salt (more or less to taste)

Mix dry ingredients together (you can grind the nuts mix in a food processor, but for Earth Hour just use already ground not and mix it by hand)

 

Then add:

1/2 Cup raw honey (more or less to taste)

2 Tablespoons raw cacao butter (melted in warm water)

1 Tablespoon coconut oil (melted in warm water)

4 to 5 Dates (cut in small pieces)

Mix well and check to see if the mixture needs a little more sweetener or salt.

Note: You can also add 1/2 cup ground raw cacao nibs at this point if you like and or 1/2 cup grated raw chocolate bar. Use any combination of nuts you like in the recipe just use the ones I have suggested as a guideline.

Various coating for the truffles: Black and white chia seeds, finely ground shredded coconut, cocoa powder, coco nibs (finely ground), almond meal or macadamia nuts (finely ground)

Tip: Put a little coconut oil on the palm of your hands before rolling the balls to keep the mixture from sticking to your hands and apply a little more as needed.

To Form the Balls: Place about 1½ tablespoons of nut mixture in your hand (enough to form about a 1 inch ball or a little larger.)

Roll all the nut mixture into balls and set aside on a plate. Then select your coatings and pour about ½ cup of each in different little bowls or containers. You may need more depending on how many coatings you choose. Take a ball and roll around in the coating to cover well and set aside in a tray that can go in the refrigerator. Roll all the Truffles in the coating(s) and then refrigerate for at least 1 hour. They will keep for several days in the refrigerator and you can also freeze then for later use.
